The moving gridlines (medians, parallels, latitiudes, longitdues) - and by this I mean curving on the display - would be the best tool. I think it is always best to work flat, but as you rotate the globe you get a different flat bit to work on . You then get to see the perspective of the other bits ...

This is a good discussion, as the major world I'm working on at the moment is a polar/scandinavian setting.
